Poached Eggs On Melted Cheese And Tomato Toast
Make Mom's Day With Breakfast In Bed
- 1 thick slice country-style bread
- 3 slices cheddar cheese
- 1 large ripe tomato, sliced
- 1 poached egg
- Fresh chive, chopped
- Salt and freshly ground black pepper
- Place the bread under the grill and toast the one side
- Place the slices of cheddar cheese and sliced tomato on the untoasted side of the bread and return to under the grill
- Bring a saucepan of salted water to the boil, add 1 tbs white vinegar. Stir the water and drop the egg into the centre of the swirling water.
- Cook for 3-4 minutes until the white has set around the yolk, but the yolk is still runny.
- Remove from the water using a slotted spoon. Drain on kitchen paper
Place the poached egg on top of the toast and sprinkle with the chives, salt and ground black pepper.
